Mayonnaise is a separate piece of culinary art. It has long become one of the top three international spices alongside mustard and ketchup. – egg yolk – used as an emulsifier in order to obtain the desired consistency of the sauce;

– spices and flavorings such as sugar, salt, mustard;
– stabilizers – thickeners for mayonnaise with fat content <70 %;
– colorants, such as beta-carotene (provitamin A), paprika extract, curcumin.

The American Heart Association recommends replacing saturated fats with monounsaturated or polyunsaturated fats, stating that “consumption of omega-6 polyunsaturated fatty acids reduces the risk of coronary heart disease”.
