What is the difference between 67% and 72% mayonnaise?
On store shelves, you can most often see mayonnaise with a fat content of 67% and 72%. The difference between them is not only in the number on the package.

The main difference between 67% and 72% mayonnaise is the vegetable oil content (fat content), which directly affects its density, calorie content and culinary properties.
Main differences:
Oil content and fat content: 72% mayonnaise contains more vegetable oil (about 72 grams per 100 g of product). 67% mayonnaise contains less fat, which makes it a little lighter, but in both cases, it is a high fat content (real mayonnaise should be at least 50%).
Consistency: A product with a fat content of 72% is usually thicker and has a richer, creamier texture. Mayonnaise 67% is the classic standard (often labeled as “Provencal”) and has a moderate consistency.
Taste: Due to its higher oil content, mayonnaise 72% has a richer, classic taste, while 67% may have more pronounced notes of mustard or other ingredients.
Calorie content: Mayonnaise 72% contains more vegetable oil than 67%. Since oil is almost 100% fat, a higher percentage means more calories in the product.
Culinary purpose:
72% – such as “European Style” from Olkom – is better suited for baking, preparing hot dishes and complex salads, as it does not stratify, holds its shape better and does not “drip down” when heated.
67% – “Provencal Style” – an universal option for dressing everyday salads, marinating meat and making sandwiches and sauces.
Emulsion stability: High-fat mayonnaises (55% and above) are considered more stable emulsions. They are less likely to separate when mixed with moist ingredients (for example, fresh cucumbers or tomatoes).
According to the classification, high-calorie mayonnaises with a fat content of more than 55% are often classified as classic or “premium” options. When choosing, you should also pay attention to the shelf life: the shorter it is, the less preservatives it contains.
